By popular request, here is the recipe for these amazingly wholesome & yummy pancakes that I (sadly) eat every single day... I'm going to be doing a LOT of running after this pregnancy, that's for sure.
First of all - you need a really good blender or food processor that can grind whole wheat kernels (this is what acts as the flour in the recipe) so it needs to grind it very fine so your pancakes aren't crunchy.
1 cup of whole kernel whole wheat (I get this from the LDS cannery, it's the only place I've ever been able to find it. I use the white whole wheat, not the red. But you may be able to find it at a whole food store as well)
1 cup of milk
Blend this together for 2 minutes
Add 1/2 c. more milk
Blend again for 2 more minutes, then add:
1 egg
1/2 c. oil
3 tsp. baking powder
2 tsp. sugar
1 tsp. salt
Blend together until well mixed. The mix will be runny at first then really thicken as it sits (don't let that alarm you, all the pancakes really turn out the same).
I've added a Pampered Chef cinnamon spice mix (1/2 tsp or so) that had orange peel in it and it made them so yummy... so doctor them up if you want. Also, I'm currently working out a more low-fat version (cutting the oil down, maybe using cottage cheese instead...) so I will post it if it turns out :)

Trader Joe's has some really delicious, cinnamony, chunky applesauce that would probably taste amazing on top of these pancakes. Could be a healthy, yummy alternative to syrup.
